Roasted Garlic Meatballs

I didn’t have any ground beef, and was rained in, so I took some frozen minute steaks I had in the freezer, thawed them, and tossed them in the food processor.  I had no idea how that would turn out, but it was pretty much the same as always except less greasy.

• 1 bulb of garlic, top chopped off
• 3 tbsp olive oil
• 1kg ground beef
• 4 eggs
• 2 cups of seasoned breadcrumbs
• 1/2 cup chopped thyme, if you have it
• Salt and pepper

Wrap the garlic, covered in olive oil, in aluminum foil, and bake at 200C / 375F for 30 minutes.  Once it cools enough to handle, squeeze the garlic out of the paper, and mix everything together.  Form into balls and place on a greased baking tray, and bake for 30-45 minutes, depending on how big you make them, flipping then over halfway through.  Serve with pasta and sauce, or on a sub, or just eat them.
